"Certified organic" vegetable salad with miso dressing offers a fascinating, nutty-flavoured sauce for a salad which also includes apple slices and pine nuts amid rocket and other leaves. Thai green curry with vegetables and tofu is a big bowl with pea eggplant, baby squash, mushroom and tofu. Fried rice with vegetables, chilli and basil presents tofu, string beans, kale and peas in an impressive pile.
