When chef Armando Montano steps into the kitchen at El Chilar Restaurant, he's not only coming to work - he comes to share his love of real Mexican cuisine using a wide variety of chiles. Each month he designs a new menu with a variety of chiles as the main ingredient. Some of the most popular dishes served are scallops and shrimp with the Armando touch. He suggests shrimp in roasted garlic and Guajillo chile sauce as an entrée. You may also want to sample the grilled tortilla and salmon napoleon with mango pico de gallo.
